Chocolate Avocado Cookies | Hudson County Moms

Upon hearing avocado and chocolate, my first reaction was….hmmm. However, once you try one, you are immediately going to reach for another and ask for the recipe!
These are a decadent treat that will satiate your chocolate fix, appeal to your childhood love of soft-baked cookies and give you a healthy dose of your healthy fats for the day to keep you going!

2 avocados
1 c dark cocoa powder
1 c date sugar or coconut sugar
2 tsp vanilla extract
2 tsp baking powder
¾ c whole wheat flour
¼ c dark chocolate chips
2 eggs or egg substitute

Preheat oven to 350F. Combine avocados and cocoa powder in a food processor. Separately mix flour, sugar, baking powder and chocolate chips. Add whisked eggs or substitute. Mix all ingredients together. Using a table spoon or an ice cream scoop, place spoonfuls of the dough onto a baking sheet covered with parchment paper. Bake for 10-12 minutes.
